“Yamagata Chilled Ramen” is a new sensation that was created in the summer of 1952 by Sakaeya Honten’s first owner, Senshiro, after much trial and error from scratch. The secret soup is made with bonito and kelp. It is best eaten with ice floating on top, which prevents the oil from solidifying and ensures that the flavor and taste remain even after the ice melts. Yamagata City recorded the highest temperature in Japan on July 25, 1933. This record remained until it was surpassed in 2007. To help you beat the scorching heat of Yamagata City, the cold ramen is now available in dried form thanks to the efforts of Sakai Noodle Factory, also located in Yamagata City.
